Courgette Fritters

I often have courgettes in the fridge and when there’s enough of them, I tend to make a batch of fritters and serve with zesty lime and salad. With the warmer weather, I like fresh and colourful food to lift the spirits and to enjoy in the sunshine. The below list makes a decent batch to last two people for a few days. Ingredients

3 medium courgettes
6 spring onions (finely chopped)
1/2 block of feta cheese
1 small bunch fresh parsley (chopped)
1 small bunch fresh mint (chopped)
1 teaspoon paprika
140g plain flour
3 large eggs (beaten)
salt and pepper to taste



Method

1. Grate the courgettes with a grater blade in the processor (or by hand), then spread onto a tea towel for 15 minutes to get rid of the excess wet.
2. Pop the spring onions in a bowl and crumble in the feta. Add the parsley, mint and paprika. Mix well.
3. Add the flour then gradually add the beaten egg mix and stir well before seasoning. To finish up, add the courgettes and stir well to combine.
4. Just like you're making pancakes, heat some oil in a frying pan. Dollop spoonfuls of the mixture in the pan and flatten out a little. Cook for about 2/3 minutes each side, or until golden brown. Serve with extra chopped mint or parsley and a good spritz of lime!
